Jambalaya

C2 requested sausage for supper so I made a scramble to find a dinner menu with that! I decided on jambalaya. This one is a pack of Italian sausage and kielbasa browned in cast iron and then half removed. I added a bag of frozen peppers and a quarter of an organic onion (still trialling). For spice I added dry mustard, black pepper, thyme, salt and ground cayenne. Once it was browned, I added the rice and chicken stock, brought it to a low simmer and covered it until the rice was done.
Hope it’s a hit!
