Spinach-tuna salad


Just threw this together the other day with what we had lying around. Since trying to reduce my carb intake to regulate my blood sugar, salads have been a stable for variety.
This one is spinach, tuna, avocado, raisins, dried cherries and dried blueberries. I sometimes add sun-dried tomatoes or grape tomatoes or fresh blueberries. If i have left over pork ribs or pork tenderloin or chicken or steak I use that. Around here anything goes! For a dressing, I drizzle with high quality apple cider vinegar and an oil (olive or grapeseed) and sprinkle with salt and a dash of black pepper. Even the little guy likes this!
