Salad with tarragon

It has been a crazy few days around here with my C2 not feeling well so meals have been whatever we can throw together. Today we were two chicken wings left over from supper so they went to the little guy. I found some green leaf lettuce, lunchmeat, and spinach. I tore the meat and lettuce and into the bowl everything went. I topped it with dried cherries, cherry tomatoes and sliced almonds. Then I dressed it up with Braggs apple cider vinegar, salt, grapeseed oil and dried tarragon. It was quite yummy; so much so in fact that you get only a picture of the nearly empty bowl.
Don’t be afraid to play with your food! I have been accused of putting everything but the sink in my salads, but it keeps it lively. If a salad meant iceberg lettuce and carrots with ranch I’d never want salad either!
