Flounder

flounder filet

This was so simple! These are frozen flounder filets from Costco. I thawed them then preheated the oven and cast iron skillet to 425 *F. Next I melted in enough unrefined coconut oil to prevent any sticking. Then I tossed in the filets, added a sprinkle of salt and watched them while they cooked (yes with the oven open). I flipped them once and cooked just until flaky.  Yum. You could add more seasonings if you want but I wanted the flavor of the flounder to shine.
