Berry cobbler


Oh yum!
I’ve been low carb for the past few months in addition to all the other dietary restrictions and it hasn’t been easy!  I was waiting for some photos in Costco last week so I perused the book section. Two paleo cookbooks caught my eye. One was “Paleo Comfort Foods” and the other was “Everyday Paleo.” Both looked like they had delicious recipes but I couldn’t justify another cookbook that night. My compromise was to take down one recipe to try so that I could judge the true quality of the recipes.  I picked “Berry Good Cobbler” from “Everyday Paleo.
It’s been incredibly busy here the last few weeks as I wrap up graduate school so I just got around to trying out the recipe tonight. It’s not as sweet as a traditional cobbler but it’s still tasty.  I won’t give you the recipe in full but I will share the ingredient list.


3 cups of berries or fruit
A drizzle of organic honey
2 tbs coconut oil, melted
1 egg (or substitute)
1 1/2 cups almond meal
2 tbs cinnamon
Full-fat coconut milk for topping the finished cobbler.

We used flax seed for egg which might break paleo rules. We also reduced the cinnamon because C2 doesn’t like cinnamon.
