Ropa vieja (yummy beef stuff)

This is a favorite around here since its introduction on the fly a few months ago.  The recipe is from http://www.easyfreshcooking.com. Essentially, you brown a chuck roast, add a cup of beef broth of water and a small can of tomato paste, some bay leaves, salt and pepper and simmer for 2-3 hours or until the beef shreds easily. Then you take out the fat and bay leaves, shred the beef and add peppers, onions and  garlic cloves. Then you cook it until the veggies are tender and serve over rice or on tortillas if you can have those.
