Supper in under an hour! Pork chops with onion-rice and broccolli

This was an experiment in cooking with what I had on hand. 
What I used:
4 boneless pork loin chops
Thyme, oregano, nutmeg, black pepper, pink salt (about 1 tsp thyme, oregano. About 1/4 tsp others)
Frozen broccoli, 1 bag
Uncle Ben’s boil-in-bag brown rice (1 bag)
1/4 small onion, chopped
Oil for pans

Start the rice water to boil and if you are cooking the broccoli on the stove start that water as well.  Heat just enough oil to coat the bottom of your skillet for the chops. Place chops in oil over medium heat. Sprinkle with herbs and spices. While the chops brown, add the broccoli and the rice to their water. Cook them by package directions. Turn the chops over and cook until the center is no longer pink or until the meat thermometer reads an appropriate temperature. Meanwhile, cook the onions in just a bit of oil until they are tender.  Once the onions and rice are done, drain the rice and combine them. Slice the pork chops thinly if you want to make it look pretty and stretch it to serve more people. Add salt to taste and serve.
